Zesty Potato Salad
Recipe provided by Red Roof Farms

Peel and dice enough potatoes to fill 2 1/2-quart bowl. Cook until done.

Hard-boil three eggs.
Chop 1/2 of a medium onion.
Chop 3/4 cup of Red Roof Farm Zesty Bread and Butter Pickles, set aside.

To make dressing, combine: 1 1/4 cups mayonnaise, 2 T. of mustard and 1/4 - 1/2 cup of Red Roof Farm Zesty Bread and Butter Pickle juice. Mix dressing ingredients together and pour over potatoes and other ingredients.

Makes 2 1/2 quarts.
